Lynn's LeftoverTurkey Giblet Pasta

  • turkey giblets


fettuccine or flat noodles (2oz per person) cooked according to pkg

1 cup cooked giblets with their gravy (additional leftover gravy or broth may be needed)

note:giblets should be chopped and sauted with butter,onions,garlic,carrots and celery,add a cup or two of water and simmer at least an hour

1 cup leftover turkey chopped

1/2 c onion

1/2 c mushrooms

1/4 c dry sherry or Marsala wine

1/4 c heavy cream

1/4 c parmesan cheese

saute' onions and mushrooms and bell pepper (optional) in 1t butter

add wine, simmer

add giblets with gravy,

add turkey simmer

add cream, simmer till reduced to desired consistency

add pasta and toss with parmesan cheese
