Ingredients

  • turkey giblets

Preparation



  1. fettuccine or flat noodles (2oz per person) cooked according to pkg

  2. 1 cup cooked giblets with their gravy (additional leftover gravy or broth may be needed)

  3. note:giblets should be chopped and sauted with butter,onions,garlic,carrots and celery,add a cup or two of water and simmer at least an hour

  4. 1 cup leftover turkey chopped
  5. 1/2 c onion
  6. 1/2 c mushrooms
  7. 1/4 c dry sherry or Marsala wine
  8. 1/4 c heavy cream
  9. 1/4 c parmesan cheese


  10. saute' onions and mushrooms and bell pepper (optional) in 1t butter
  11. add wine, simmer
  12. add giblets with gravy,
  13. add turkey simmer
  14. add cream, simmer till reduced to desired consistency
  15. add pasta and toss with parmesan cheese
