How to Make It
Heat oil and butter in a large nonstick skillet over medium heat. Add onion; cook 5 minutes. Add bell pepper and garlic; cook 3 minutes. Add potatoes, salt, pepper, and ham; cook 16 minutes or until potatoes are golden brown, stirring occasionally. Top with cheese; cook 2 minutes or until cheese melts.
This is really good in a pinch. I added a little Italian salad dressing to it in place of the plain vegetable oil and I omitted the butter. I also added some broccoli crowns near the end of cooking and got in my greens!
I used smoked deli ham and a low-fat Mexican cheese blend, and thought the flavors were wonderful. Be sure that the onion is entirely cooked, and don't forget the salt and pepper. Also, a nonstick pan is mandatory. Will definitely make this again.
