Louisiana Spider Bread

1 1/2 cups cornmeal
1/3 cup sifted all-purpose flour
1 teaspoon baking soda
1 tablespoon sugar
1 teaspoon salt
2 tablespoons shortening, melted
2 eggs, beaten
1 cup buttermilk
2 cups milk, divided


Combine dry ingredients; add shortening, eggs, buttermilk, and 1 cup milk, mixing well. Pour batter into a lightly greased 2-quart casserole. Pour remaining milk over batter in casserole; do not stir. Bake at 350° for 30 minutes or until a knife inserted in center comes out clean.
