Long-Grain Rice With Feta, Pistachios, and Mint

Ingredients

  • 2 tablespoons butter
  • 2 shallots, minced
  • 1 teaspoon salt
  • 1 cup uncooked long-grain rice
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 3 tablespoons chopped fresh mint
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon pepper

Preparation

1. Melt butter in a medium saucepan over medium-high heat. Add shallots, and sauté 1 minute. Stir in salt and 2 cups water; bring to a boil. Stir in rice; cover, reduce heat to low, and cook 20 minutes or until water is absorbed and rice is tender. Stir in feta cheese and next 4 ingredients.
