Ingredients
- 2 tablespoons butter
- 2 shallots, minced
- 1 teaspoon salt
- 1 cup uncooked long-grain rice
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped pistachios
- 3 tablespoons chopped fresh mint
- 1/2 teaspoon lemon zest
- 1/2 teaspoon pepper
Preparation
- 1. Melt butter in a medium saucepan over medium-high heat. Add shallots, and sauté 1 minute. Stir in salt and 2 cups water; bring to a boil. Stir in rice; cover, reduce heat to low, and cook 20 minutes or until water is absorbed and rice is tender. Stir in feta cheese and next 4 ingredients.
