This classic Peruvian dish is a delicious amalgamation of some of our favorite foods: steak, French fries, and plenty of sautéed peppers and onions. Perfect for a quick and fun weeknight meal, this beef and potato stir-fry is a dinner the whole family can get behind. Serve it up with a simple green salad for a well-rounded plate.
1 tablespoon olive oil
1 pound top sirloin steak, thinly sliced
1/2 teaspoon black pepper
1 1/2 teaspoons kosher salt, divided
1 red onion, thinly sliced
1/3 cup yellow bell pepper strips
2 serrano chiles, thinly sliced
2 garlic cloves, thinly sliced
4 plum tomatoes, cut into wedges
2 tablespoons soy sauce
2 tablespoons red wine vinegar
3 cups crispy cooked French fries
4 scallions, cut into 1-in. pieces (about 1/2 cup)
1/2 cup fresh cilantro leaves
How to Make It
Heat oil in a large skillet over medium-high. Sprinkle sirloin with black pepper and 1 teaspoon of the salt. Cook, stirring occasionally, until browned, about 2 minutes. Transfer sirloin to a plate.
Add onion, bell pepper strips, serrano chiles, and garlic; cook, stirring occasionally, until onions are translucent, 2 to 3 minutes. Add sirloin and any accumulated juices, tomatoes, soy sauce, vinegar, and remaining 1/2 teaspoon salt. Cook, stirring occasionally, 2 minutes. Remove from heat. Add French fries, and gently toss to combine. Sprinkle with scallions and cilantro.
