Lobster Salad with Mango and Red Onion

Ingredients

  • 3 tablespoons fresh lime juice
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 4 cooked lobster tails, sliced into medallions or chopped
  • 1 cup diced mango
  • 1/2 cup finely chopped jicama
  • 1/4 red onion, very thinly sliced
  • 1/2 jalapeño pepper, very thinly sliced
  • 1/2 cup lightly packed fresh cilantro leaves
  • 4 cups mixed salad greens

How to Make It

  1. Combine first 7 ingredients in a jar; cover with a lid, and shake to combine.

  2. Combine lobster and next 5 ingredients; toss with dressing. Divide salad greens among 4 plates; top evenly with lobster mixture.
