Ingredients

  • 2 chicken breasts boneless, skinless
  • 2 teaspoon(s) garlic minced
  • 2 tablespoon(s) brown sugar
  • 4 slice(s) bacon
  • 1 bag(s) mixed vegetables
  • 1 cup(s) cheddar cheese shredded
  • 2 potatoes cut into 1 inch cubes
  • 2 tablespoon(s) butter

Preparation

  1. I cut the bacon into 1/2 in slices (so it would fry faster). Fry the bacon until crisp. Remove bacon pieces and dry on paper towels.
  2. Place chicken breasts in the rendered bacon grease partially cook on both sides about 2 minutes each. Mix brown sugar and minced garlic rub on chicken and place in the oven at 400 for about 15 minutes until done. While chicken is in the oven I put potatoes in the skillet with the bacon grease salt n pepper and cook covered about 10 minutes stirring occasionally.
  3. Add mixed vegetables to skillet cover and cook an additional 5 minutes. Cut chicken into 1 in cubes and put in skillet cover with cheese and bacon pieces turn off heat and put lid back on for a couple minutes until cheese is melted. Soooo good!!!
