Loaded Baked Potato & Chicken Casserole

Ingredients

  • 2 pound(s) chicken breasts chopped
  • 8 Potatos cubed
  • Sauce
  • 1/3 cup(s) olive oil
  • 1 1/2 teaspoon(s) salt
  • 1 tablespoon(s) fresh ground pepper
  • 1 tablespoon(s) paprika
  • 2 tablespoon(s) garlic powder
  • 6 tablespoon(s) Hot sauce
  • Toppings
  • 2 cup(s) cheddar cheese shredded
  • 1 cup(s) bacon cooked and crumbled
  • 1 cup(s) green onions diced

Preparation

  1. Preheat oven to 500
  2. In large bowl mix olive oil, salt, pepper,paprika, garlic powder,hot sauce
  3. Add potatoes to the bowl
  4. coat baking dish with cooking spray
  5. Add potatoes (allow excess sauce to remain in bowl)
  6. Bake potatoes for 45 minutes, stirring every 15 mins
  7. Add cubed chicken to bowl with leftover sauce, allow to marinate while potatoes bake
  8. Mix together cheese, bacon and green onion in separate bowl
  9. Once potatoes are done, add the chicken then layer toppings over the chicken
  10. Bake for additional 15 minutes or until chicken is done and cheese melted
