Lime Shrimp Rolls

Made with leftover Grilled Lime Shrimp, Lime Shrimp Rolls are ou take on the lobster roll and make a tasty quick-fix supper.

1/2 cup chopped celery
1/3 cup mayonnaise
1/2 teaspoon lime zest
1 tablespoon fresh lime juice
1/2 teaspoon chopped fresh tarragon
2 tablespoons butter, melted
1 garlic clove, pressed
4 hot dog buns
4 lettuce leaves
Lime wedges


Preheat oven to 375°. Coarsely chop reserved shrimp from Grilled Lime Shrimp and Vegetable Rice. Stir together celery, mayonnaise, lime zest, lime juice, tarragon, and shrimp in a bowl. Stir together melted butter and garlic; spread on cut sides of hot dog buns. Bake 7 to 8 minutes or until toasted. Place 1 lettuce leaf in each roll; top with shrimp mixture. Serve with lime wedges.
