Lime-Peanut Dressing

Ingredients

  • 1/2 cup lime juice
  • 3 tablespoons sugar
  • 2 tablespoons finely chopped unsalted roasted peanuts
  • 2 tablespoons fish sauce
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon chopped fresh cilantro
  • 4 garlic cloves, minced

Preparation

Stir together all ingredients until blended. Serve dressing over mixed salad greens and assorted fresh vegetables.
