Cut the meat across the grain to create thin, tender, juicy slices of steak.
1/4 cup white wine vinegar
2 tablespoons chopped fresh cilantro
1 tablespoon vegetable oil
2 teaspoons coarsely chopped jalapeño pepper
1 1/2 teaspoons fresh lime juice
2 garlic cloves, pressed
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pounds flank steak
How to Make It
Combine vinegar and next 7 ingredients in a large zip-top plastic bag; shake to combine. Add steak to bag and marinate in refrigerator at least 8 hours, turning bag occasionally.
Remove steak from bag; discard marinade. Place steak on grill rack coated with cooking spray; grill 6 to 8 minutes on each side or to desired degree of doneness. Let stand 5 minutes. Cut steak diagonally across grain into thin slices.
