Lime Aïoli
Ingredients
- 3 garlic cloves
- 2 large egg yolks
- 1 teaspoon grated lime rind
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 cup vegetable oil
- 1 tablespoon water
Preparation
- Process garlic in food processor until minced. Add yolks and next 4 ingredients; process until smooth. With processor running, pour oil through food chute in a slow, steady stream, and process until blended. Add water to thin, if necessary.
