Lime Aïoli

Ingredients

3 garlic cloves
2 large egg yolks
1 teaspoon grated lime rind
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup vegetable oil
1 tablespoon water

Preparation

Process garlic in food processor until minced. Add yolks and next 4 ingredients; process until smooth. With processor running, pour oil through food chute in a slow, steady stream, and process until blended. Add water to thin, if necessary.
