Lime Aïoli

Yield Makes 2/3 cup

Ingredients

  • 3 garlic cloves
  • 2 large egg yolks
  • 1 teaspoon grated lime rind
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup vegetable oil
  • 1 tablespoon water

How to Make It

  1. Process garlic in food processor until minced. Add yolks and next 4 ingredients; process until smooth. With processor running, pour oil through food chute in a slow, steady stream, and process until blended. Add water to thin, if necessary.
