Coat 3 (9-inch) round cakepans with cooking spray; sprinkle 2 teaspoons flour evenly into pans, shaking to coat.
Combine remaining 3 cups flour and next 4 ingredients in a large bowl. Stir together eggs, applesauce, and oil; add to flour mixture, stirring just until dry ingredients are moistened. (Do not beat.) Stir in mashed banana, vanilla extract, and pineapple. Pour batter evenly into prepared pans.
Bake at 350° for 23 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool layers in pans on wire racks 10 minutes. Remove layers from pans; cool completely on wire racks.
Spread Cream Cheese Frosting between layers and on top and sides of cake.

No problems with this being a heavy, dry cake as other reviews stated. In fact, it was very good and moist with just the right amount of spices. Do not overmix. Batter is a little dry until the undrained pineapple is added. The oil and sugar in the original recipe is not missed at all. I will definitely make this cake again.
I followed recipe to the letter and the cake came out dense and heavy. I had to throw it away. Experienced bakers please help. I was careful not to over mix. I guess it's back to boxed cake mix for me... So sad as I made it for company.
I made this cake as a birthday gift yesterday. First, I admit I'm a baking amateur. But gosh, this cake took a very long time to make. It tastes pretty good, but it's as dense as a brick and kinda dry. Any suggestions from you experienced bakers out there who had such great success with this recipe?
This recipe is awesome. One of my all-time favorite cakes--I have made it at least four times, and I've yet to meet someone who doesn't rave about it. It's simply great, and you would never know there are only 3 TBSP of oil in the whole thing! Make it immediately if not sooner.
I was unsatisfied with this recipe for 'Hummingbird Cake' considering it failed to include the vital ingredient of chopped pecans to the cake batter. Also the cooking time of 23-25mins in the oven seemed ridiculously short compared to how long it really needed.
This was my first time making Hummingbird cake and it was a huge hit. I added an additional 1/2 tsp. of Cinnamon to the recipe, but other than that followed the cake recipe exactly as written. The cake was moist and flavorful with just the right touch of sweetness. I used a favorite vanilla cream cheese frosting from another recipe. This is a delicious cake! Everybody raved and there was not a slice left.
