Ingredients
- 4 cup(s) Water
- 4 cup(s) Chicken Broth
- 2 cup(s) Lentils Green or Black Best
- 2 teaspoon(s) Olive Oil
- 2 Small Yellow Onions/1 Large Chopped
- 2 Carrots Chopped
- 1 Large Rosemary Sprig Chopped
- 2 clove(s) Garlic Chopped
- 1/2 pound(s) Turkey Sausage (1 hot/1 mild) Remove Casings
- 1 tablespoon(s) Tomato Paste
- Salt & Pepper To Taste
- 1/2 head(s) Kale Chopped
Preparation
- Combine water, broth, and lentils in a large saucepan over medium heat. Bring to a simmer. Cook 30 minutes or until almost tender.
- Heat oil in a saucepan over medium-high heat. Add onion, carrot, rosemary, and garlic to pan. Sauté 10 minutes or until tender. Add sausage; cook 5 minutes, stirring to crumble. Add tomato paste and remaining ingredients; cook for 1 minute or until heated. Add sausage mixture to lentils; bring to a boil. Cook 30 minutes or until lentils are tender.
