Lemony Potato Salad

Brought it to a friends back to school party tonight and everyone loved it! Will make again since it does not require refrigeration, very helpful for an outdoor picnic.

Had this at a tailgate this past Saturday...just as a previous reviewer said - very light and no worries about mayo spoiling. The best thing - it's YUMMY! Quite possibly my favorite potato salad ever!

I hate creamy potato salad, so this recipe from SL was an absolute godsend. It is so easy to make, no fancy ingredients, and it's so fresh and tasty. I usually use limes instead of lemons, though and it lends a wonderful flavor. We make it almost every week in the summer. We get fresh red, gold and purple potatoes from the farmer's market. It's great for a picnic too because you don't need to refrigerate it. My family loves it, this is a keeper. I need to write it down for the recipe box!

Best potato salad recipe, my daughter hates creamy potato salads & this was a success. Super easy to make, tasty, fresh, no expensive or hard to find ingredients, this recipe is a keeper in my house. Perfect for spring & summer potlucks.

This is a very refreshing take on the traditional potato salad. I really wanted something without mayo and less heavy, and this fit the bill perfectly. I'll be excited to make this again!

This was really good - made it for company last weekend and everyone liked it. I used two bags of those little red potatoes that are pre-scrubbed for my convenience and doubled everything else except time, which was less, and I cut the little potatoes in half or quarters depending on the size. Seriously good summer salad. Very fresh, delicious and easy.
