Ingredients

  • 2 pounds fresh green beans, trimmed
  • 2 teaspoons grated lemon rind
  • 3 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 6 green onions, chopped
  • 1/2 cup chopped fresh or 1 teaspoon dried basil

Preparation

  1. Cook beans in boiling water to cover 15 minutes; drain. Place beans in a large bowl.
  2. Whisk together lemon rind and next 4 ingredients. Pour mixture over beans. Add onions and basil, tossing to coat.
