Lemony Caesar Dressing

Yield Makes 1/2 cup
Lemon zest lends extra brightness to our Lemony Caesar Dressing.

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 to 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, finely minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon anchovy paste (optional)
  • 1/2 cup freshly grated Parmesan cheese

How to Make It

  1. Process first 8 ingredients and anchovy paste, if desired, in a blender, stopping to scrape down sides. Add cheese; process until smooth.
