Ingredients

2 tablespoons extra-virgin olive oil
1/2 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1/4 teaspoon salt
8 cups arugula
1/3 cup thinly sliced red onion

Preparation

Combine olive oil, lemon rind, lemon juice, and salt in a large bowl. Add arugula and onion; toss well.
