Lemon-Thyme Simple Syrup

Photo: Rachel Weill; Food Styling: Karen Shinto
Total time 30 mins
Yield Makes 1 cup
Use this sweetly herbaceous cocktail syrup in our Lemon-Thyme Pimm's Cooler (it blends well with the pleasantly bitter flavors of the drink). If you'd prefer a mocktail, try the syrup with club soda.

  • 3/4 cup sugar
  • 4 (4-in.) thyme sprigs
