- 3/4 cup(s) butter softened
- 1 egg
- 1 box(es) lemon cake mix
- 1 cup(s) yellow cornmeal
- 2 tablespoon(s) shredded lemon peel
- coarse granulated sugar
- Preheat oven to 375 degrees. In a large mixing bowl, beat butter and egg with an electric mixer. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel.
- Using 1 tablespoon of dough for each cookie, roll into balls. Roll in sugar. Place 2 inches apart on ungreased cookie sheets. Bake for 9-10 minutes or until set. Let cool on the cookie sheet for 1 minute; transfer to a wire rack to cool completely.
