Lemon Seven-Minute Frosting
Yield: enough for one (9-inch) 2- layer cake
- 1 1/2 cups sugar
- 2 egg whites
- 1 tablespoon light corn syrup
- 3 tablespoons water
- 2 tablespoons lemon juice
- 1 tablespoon lemon rind
- Combine sugar, egg whites (at room temperature), and syrup in top of a large double boiler. Add water and lemon juice, and beat on low speed of an electric mixer for 30 seconds or just until blended.
- Place over boiling water; beat constantly on high speed of electric mixer about 7 minutes or until stiff peaks form. Remove from heat. Add lemon rind; beat until frosting is thick enough to spread. Spread on cooled cake.
