Ingredients
- 25 2-3oz piece(s) Chicken Diced
- 3 cup(s) Chicken broth low sodium
- 1 1/2 cup(s) Chives fine chopped
- 1 1/2 cup(s) Lemon-Pepper spice
- 25 piece(s) Red lettuce leaves
- 25 slice(s) tomato
Preparation
- 1. Wash and set aside 25 large red lettuce leaves
- 2. Set aside 25 1/8 inch tomato slices
- 3. Dice and cook chicken breast in broth with chives and lemon-pepper spice, sett aside to chill
- 4. Set one lettuce leaf on plate cupped side up
- 5. Place one serving of chilled chicken on leaf and add one tomato slice as garnish
