The flavors of lemon and mint really bring frozen peas to life. This side dish works especially well with pork chops or lamb.

2 cups frozen green peas
2 tablespoons water
1 tablespoon chopped mint
1 teaspoon butter
1/2 teaspoon grated lemon rind
1/4 teaspoon pepper
1/8 teaspoon salt


Place peas and water in a bowl; cover. Microwave at HIGH 3 minutes, stirring after 2 minutes. Add mint, butter, lemon rind, pepper, and salt; toss.
