  • 1/4 cup chopped fresh mint
  • 1 tablespoon grated lemon rind
  • 2 teaspoons minced garlic
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 (3-ounce) French-cut lean lamb rib chops, trimmed


  1. Prepare grill.
  2. . Combine first 6 ingredients; divide mixture in half. Pat half of mixture evenly on both sides of lamb. Set aside remaining mixture.
  3. . Place lamb on grill rack. Cover and grill 4 minutes on each side or until desired degree of doneness. Sprinkle reserved mint mixture evenly over lamb; let stand 3 minutes.
