Lemon Jelly Filling

Yield enough for one 4- layer cake


  • 4 egg yolks
  • 1 1/3 cups sugar
  • 2 1/2 teaspoons grated lemon rind
  • 1/4 cup plus 1 1/2 tablespoons lemon juice
  • 1/4 cup butter or margarine

How to Make It

  1. Combine first 4 ingredients in top of a double boiler. Cook over high heat, stirring constantly, until sugar dissolves.

  2. Add butter, and cook 20 minutes, stirring constantly, or until mixture is smooth and thickened. Cool filling thoroughly.
