- 4 egg yolks
- 1 1/3 cups sugar
- 2 1/2 teaspoons grated lemon rind
- 1/4 cup plus 1 1/2 tablespoons lemon juice
- 1/4 cup butter or margarine
How to Make It
Combine first 4 ingredients in top of a double boiler. Cook over high heat, stirring constantly, until sugar dissolves.
Add butter, and cook 20 minutes, stirring constantly, or until mixture is smooth and thickened. Cool filling thoroughly.
