The whole family loved this dish. Really flavorful with a crust a little like parmesan chicken only a dressed up cubed steak style. Served with asparagus and mashed potatoes.

Ingredients
- 1 cup fine, dry breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 3 egg whites, lightly beaten
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 4 (4-ounce) cubed beef steaks
- Olive oil-flavored vegetable cooking spray
Preparation
- Combine first 5 ingredients. Combine egg whites, rind, and juice. Dip steaks into egg white mixture; dredge in breadcrumb mixture. Coat a nonstick skillet with cooking spray; place over medium heat. Add steaks; cook 8 minutes on each side or until tender.
