How to Make It

Step 1

Preheat oven to 350°.

Step 2

Beat butter and granulated sugar in a large bowl with a mixer at medium speed until well blended. Add eggs, ginger, and vanilla; beat well.

Step 3

Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, baking powder, baking soda, and salt. Add flour mixture and yogurt alternately to sugar mixture, ending with flour mixture.

Step 4

Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° for 57 minutes or until a wooden pick inserted in center comes out clean.

Step 5

Combine powdered sugar and lemon juice in a small bowl; stir until smooth. Spread over top of loaf, and cool in pan on a wire rack.
