Lemon Glaze

Yield about 1 cup


  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon butter or margarine
  • 1 cup boiling water
  • 1 egg yolk
  • 1 teaspoon lemon juice

How to Make It

  1. Combine sugar, cornstarch, and butter in a heavy saucepan; mix well. Stir in boiling water; cook over low heat, stirring constantly, until thickened.

  2. Combine egg yolk and lemon juice; stir well. Gradually stir about one-fourth of hot mixture into yolk; add yolk mixture to remaining hot mixture, stirring constantly. Continue to cook until thickened. Chill glaze thoroughly before using.
