Lemon Frosting

Yield enough for 2 dozen cupcakes

Ingredients

  • 1/4 cup plus 2 tablespoons butter or margarine, softened
  • 3 1/4 cups sifted powdered sugar, divided
  • 1/4 cup lemon juice
  • 6 drops yellow food coloring

How to Make It

  1. Cream butter; add 1 cup sugar, beating well at medium speed of electric mixer. Add remaining sugar alternately with lemon juice, beating until smooth enough to spread. Stir in food coloring.
