Cream shortening in a large mixing bowl; gradually add 1 1/2 cups sugar, beating well. Add eggs and flavorings; beat well.
Combine flour, baking powder, and salt in a small mixing bowl; gradually add to creamed mixture, stirring well.
Drop dough by heaping teaspoonfuls 3 inches apart onto greased cookie sheets. Gently press cookies with a fork to flatten. Sprinkle each cookie with remaining sugar. Bake at 375° for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.
