Lemon Curd

Yield 4 cups


  • 6 eggs
  • 2 egg yolks
  • 2 cups sugar
  • 1/4 cup grated lemon rind
  • 3/4 cup lemon juice
  • 1 cup butter or margarine

How to Make It

  1. Combine eggs, yolks, and sugar in top of a double boiler, stirring well. Add remaining ingredients; place over gently boiling water. Cook, stirring constantly, until smooth and thickened. Remove from heat; let cool. Chill.
