I served this with a Greek chicken/tomato/olive dish and it was really good. A little more lemon zest would have been good. Other than that, it's a really simple dish that requires little-to-no babysitting and made a great side dish.

Ingredients
- 1 cup water
- 2/3 cup uncooked whole wheat couscous
- 1 teaspoon grated lemon rind
- 1/4 cup pine nuts, toasted
- 2 teaspoons extra-virgin olive oil
- 1/4 teaspoon salt
Preparation
- 1. Bring 1 cup water to a boil in a small saucepan. Stir in couscous and lemon rind. Remove from heat; cover and let stand 5 minutes. Add pine nuts and remaining ingredients; fluff with a fork.
