In large bowl, whisk together mayonnaise, shallot, Dijon mustard, zest and juice of the lemon, and ground pepper. Stir in chicken and celery. Season to taste with salt and pepper. Sprinkle with fresh tarragon leaves.
Very much enjoyed this recipe. I used rotisserie chicken from the store to save time. No shallots were available at my store, so I diced green onions up and added it to the chicken and celery. Everyone really loved it.
