This is delicious....I made the lemon chess pie filling for the tart. I love recipes that aren't overly sweet and this was perfect. I wouldn't hesitate to make this over again. I'm taking the tart to a family gathering since I used a large lemon from my son's lemon tree. The tart recipe made a crust for a 13 x 9 pan and I used a pretty round tart dish instead so was able to make a small one as well to taste (before the gathering!) as there was so much crust. However, the amount of lemon chess filling was a perfect amount for the round tart dish with just a tad leftover for my tasting dish.
Excellent flavor! Make sure to use a good, tart lemon as the filling is nice and sweet. I only had coarse grain cornmeal and was afraid it would give it a grainy consistency, so ground the cornmeal a little fine. Fast and easy!
