Lemon Butter Cream Frosting

Yield frosting for one 3-layer cake


  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 2 teaspoons grated lemon rind
  • 4 cups sifted powdered sugar
  • 1/4 cup plus 2 tablespoons milk
  • Yellow food coloring

How to Make It

  1. Combine butter and shortening, beating until light and fluffy. Add flavorings and lemon rind, beating well. Add powdered sugar and milk alternately, beating until spreading consistency. Add yellow food coloring to desired tint; beat until smooth.
