This was my first experience with broccolini and it'll be hard to go back to regular old broccoli! The broccolini was so tender and mild and even though I didn't have a lemon, I didn't even miss it. Just olive oil, salt and pepper made this a great easy and flavorful side dish that went beautifully with the caramelized onion mashed potatoes and smoky grilled pork chops.

- 2 teaspoons olive oil
- 2 (6-ounce) bunches Broccolini
- 1/4 teaspoon salt

- Heat olive oil in a large skillet. Add Broccolini, salt, and pepper; sauté 5 minutes or until crisp-tender. Remove from heat; stir in lemon rind.
