Lemon Artichoke Pesto

Ingredients

  • 1 cup(s) canned artichoke hearts quartered
  • 2 clove(s) garlic minced
  • 1/2 cup(s) fresh basil packed
  • 1/4 cup(s) water
  • 2 tablespoon(s) parmesan cheese
  • 1 1/2 tablespoon(s) lemon juice
  • 1 tablespoon(s) olive oil
  • 1 teaspoon(s) fresh lemon rind grated
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper

Preparation

1. Place all the ingredients in food processor and process until pureed

2. Toss with your favorite pasta
