Just made this for Christmas dinner. Amazing! The pear relish is delicate - be careful what wine you choose so as not to overpower it. I made it exactly according to the recipe (though made just a third of the relish since I wasn't serving 18!). This was actually fairly simple to make considering the WOW effect. I am planning to use some for left-overs, so didn't let the internal temp reach 145.
