- 10 new potatoes
- 3 large leeks (about 1 1/2 pounds), cleaned
- 3 cups water
- 1/4 pound salt pork
- 1 teaspoon maple syrup
- Salt to taste
How to Make It
Wash potatoes; pare a 1-inch strip around center of each potato. Cut leeks into 2-inch pieces.
Combine potatoes, leeks, water, salt pork, and maple syrup in a medium Dutch oven. Bring to a boil; cover. Reduce heat, and simmer 25 minutes or until potatoes and leeks are tender. Add salt to taste.
