Prep: 8 minutes. Since Mandarin oranges are fairly delicate, toss them gently so you don't tear up the sections.
2 (8-ounce) cans Mandarin oranges in light syrup
1 1/2 tablespoons white wine vinegar
2 teaspoons olive oil
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon coarsely ground black pepper
5 cups coarsely chopped red or green leaf lettuce
1 cup trimmed watercress
How to Make It
Drain oranges, reserving 2 tablespoons syrup. Combine syrup, vinegar, and next 4 ingredients in a small bowl, stirring with a whisk. Combine lettuce, watercress, and oranges in a large bowl. Add dressing, and toss well.
