How to Make It

Step 1

Combine potatoes and water to cover in a bowl, and let stand 10 minutes. Drain well.

Step 2

Stir together potatoes, eggs, and next 4 ingredients, blending well.

Step 3

Pour oil to a depth of 1/2 inch into a large heavy skillet; heat to 375°. Drop potato mixture by 1/4 cupfuls into hot oil, and fry, in batches, 3 to 4 minutes on each side or until golden. Drain on paper towels. Serve with sour cream and applesauce.
