Korean Dipping Sauce

Look for roasted ground sesame seeds at ­Korean markets. They're not ground to a powder but crushed a bit. You can make your own by toasting sesame seeds until deeply golden, allowing them to cool, and crushing with a mortar and pestle. Serve this sauce with Scallion Pancakes and Shrimp Mandu.

Ingredients

  • 1/4 cup lower-sodium soy sauce
  • 3 tablespoons water
  • 1 tablespoon rice vinegar
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons roasted ground sesame seeds
  • 2 tablespoons thinly sliced green onions
  • 1 red jalapeño pepper, sliced

Preparation

  1. 1. Combine first 5 ingredients in a small bowl, stirring until sugar dissolves. Add onions and jalapeño.
