- 3 medium leeks
- 5 tablespoon(s) butter
- 9 cup(s) chicken broth
- 5 medium potatoes
- 2 pound(s) kielbasa
- 4 cup(s) fresh spinach
- In Large saucepan saute white portion only of 3 medium leeks (sliced) in 5 Tbsp butter until tender. Add approximately 9 cups chicken broth and 5 medium potatoes (peeled and diced).
- Bring to a boil then reduce heat and cover. Simmer 15-20 minutes until potatoes are tender.
- Stir in 2 lbs kielbasa (cut into bite sized pieces). Heat through. Just before serving stir in 2-4 cups fresh spinach.
- 10 servings.
