Have made this several times. Very yummy, a great summertime treat. I found reduced fat coconut at the store and replaced half the coconut with that, to reduce the saturated fat in the recipe.

A co-worker made these a couple of years ago and I have searched for the recipe since then. Imagine my joy when I finally found it! They are yummy, but as other reviewers have noted, it takes much more than 2/3 cup of crumbs. I used about 3-1/2 cups and added lots more lime juice. I just used regular coconut, too. I could eat all of these by myself (but I suppose I should share:-)

I made these to take to a "winter beach party" but ended up going to buy a key lime pie instead. I was so disappointed because they tasted great but I couldn't get past the fact that it felt like I was eating raw dough, as a previous reviewer said. My coconut wouldn't stick to them either.

These tasted fantastic...the lime was a surprising pop I your mouth with th subtle hint of coconut! However, they looked like lumps of raw sugar cookie dough (friends even asked me if that's what they were) and the coconut wouldn't stick to them. Not pretty and I won't make them again
