Key Lime-Coconut Smoothie

A cross between Key lime pie and a coconut mojito, this smoothie makes a great breakfast drink or sweet afternoon treat. Sprinkle some shredded coconut on top, if you like.

  • Yield: Serves 2 (serving size: 3/4 cup)

Ingredients

  • 1/2 cup coconut milk
  • 1/4 teaspoon grated lime rind
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1 (6-ounce) carton Key lime fat-free yogurt, frozen
  • 3 ice cubes

Preparation

1. Place first 4 ingredients in a blender; process until smooth. Add yogurt; process until smooth. Remove center piece of blender lid; secure lid on blender. With blender on, drop ice cubes, 1 at a time, through center of blender lid; process until smooth. Serve immediately.
