Kathy's roasted vegetables

Bake vegetables (squash, zucchini, onion, broccoli, cauliflower, etc.) @ 450 degrees for 10 minutes after coating with one part olive oil and two parts balsamic vinegar. Then broil.

Preparation

Mix assorted vegetables (squash, zucchini, onion, broccoli, cauliflower, etc.) with 1 part olive oil and 2 parts balsamic vinegar. Then place in 450 degree oven for 10 minutes. Then broil.
