4 1/2 cups
2 green bell peppers, coarsely chopped
2 tomatoes, coarsely chopped
1 onion, coarsely chopped
1 tablespoon minced fresh cilantro
2 tablespoons fresh lemon juice
1/4 teaspoon freshly ground pepper
Combine first 5 ingredients; toss gently. Cover and chill 1 hour. Sprinkle with pepper; toss gently.
